The Fountain of Youth is simply 100% natural, fresh coconut water. This is the clear liquid from inside the young, green coconut. Its highly nutritious and is jammed full of vitamins and minerals and there’s no added sugar and no preservatives. Its a great, natural energy Drink.
The Story of Monkey.
Whilst lazing around on the beach on holilday, someone gave us a young green coconut with a straw poking out. We fell in love and decided to bring that drink back to our bar in Berlin. So started a long journey until we found exactly what we were looking for; the most wonderful people farming the very best coconuts and finally we had found something so fresh and delicious that it felt exactly like that very first drink on that beach. In fact it felt so goof we decided to call it the Fountain of Youth.
The Fountain Of Youth is 100% natural coconut water, with absolutely nothing added, and of the highest quality and freshness possible to be found. We work with a collective of small farmers from a region in Thailand famed for the natural sweetness and delicate flavour of its coconuts and recog- nized as producing the very best coconut water. Indeed, this is the place the King of Thailand gets his coconut water from.
Directly after being harvested, the young coconuts are brought into the cooperative from the sur- rounding palm groves by the farmers who gathered them. Within hours of picking, each coconut is inspected and the husk is cut away and the top of the coconut is opened by hand, one at a time. Their precious water is then collected to be taste-tested, filtered and immediately placed into the cans and sealed. From here they are lightly heat-pasteurized with the whole process from the col- lection of the coconut water to the sealed can ready to be boxed up, lasting only a few hours so the water arrives here as fresh as possible.

Like the discovery of most commodities, coffee was highly prized, mostly misunderstood and appreciated for its medicinal purposes. We’re talking about the 15th century, here. Fast-forward a few hundred years past the Y2K and you’ll see the beginnings of the ST. ALi Family in South Melbourne in 2005 placing a strong ethos on quality beans and unique brewing methods.
Yes, they take their coffee very seriously- serious enough to be named one of the most pretentious things ever in a Buzzfeed listicle in 2013.
But, that’s not all they’re known for. Head Barista, Matt Perger placed first in the World Coffee & Good Spirits Championship in 2014; Second in the 2013 World Barista Championship for his redial, rethink on filter coffee- a paradigm shift in the category- as well as winning first place in the 2012 World Brewer’s Cup.
Matt Perger and his coffee disciples or boy band counterparts have toured all over the globe starring in pop-up cafes, master classes and merchandise signings.
Now, you’ll find the St.Ali family has expanded from their warehouse-chic flagship in Yarra Place to Sensory Lab, Clement, Tom Thumb, Plantation and Deadman Espresso
Welcome to the fold St.Ali – One of Henry Lee’s featured producers & special guest coffee roasters as part of our new Autumn menu launching on Wednesday 22nd April, 2017.

Prodjuice sprouted on Sydney’s Northern Beaches in 2013. We are juice – cold pressed.
The Prodjuice ethos is simple. To bring you a high quality product, good for your health & good for the environment. Prodjuice, juice is pressed in small batches, each batch tasted & checked, then bottled lovingly by hand.
With the belief in creating as little waste as possible, All fruit & vegetable scraps are taken to the Prodjuice compost garden where they are either composted or added to worm farms. A lot of our compost is donated to local community gardens, which are also available at Prodjuice market stalls. Composting the scraps means the juicing process is virtually waste free.
Prodjuice… One of the very best tasting, and ethically created cold pressed juices around, and we at Henry Lee’s are extremely happy to be able to offer you this beautifully created product.

One of our first featured artisan producers, The Urban Beehive.
The Urban Beehive is driven by two beekeepers, Doug Purdie and Vicky Brown, who met through the NSW Beekeepers Association and decided things were getting serious with bees.
The Urban Beehive started in 2010 with the aim of supporting the honeybees that do their critically important work in urban Sydney.
“We put beehives in city backyards, community gardens and on rooftops; from Bondi to Marrickville – even the Botanic Gardens and Centennial Park. Across Sydney, the bees are enjoying some great views! And our hives are happy and healthy”
Internationally, bees are in drastic decline, with whole populations being destroyed overnight as a result of introduced threats. The Urban Beehive are here to help protect local bee populations against these threats; and to raise awareness of the plight of all our beneficial insects. This is partly through education with their popular beekeeping courses in The Centennial Parklands, plenty of public speaking and now a beekeeping shop in Mascot, Sydney where you can buy all your beekeeping needs in one place..
Support local, buy honey. Proudly supported by Henry Lee’s.
